  • Fresh cilantro or parsley leaves for garnish

Instructions

  1. Sauté the base vegetables:
    Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until translucent.
  2. Incorporate the anti-inflammatory ingredients:
    Add the carrot, celery, and grated ginger. Cook for 2-3 minutes. Then, add the turmeric and cumin, mixing well to release their aromas.
  3. Cook the soup base:
    Pour in the vegetable broth and bring to a boil. Reduce the heat and add the red lentils. Simmer for 15-20 minutes, or until the lentils are soft.
  4. Add the green ingredients:
